Hummus

Ingredients

  • 1 garlic clove
  • 1 19 oz chickpeas
  • 4 tbsp lemon juice
  • 2 tbsp tahini
  • 1 garlic glove chopped
  • salt and black pepper
  • 2 tbsp olive oil extra virgin

Instructions

  1. In a blender, chop the garlic. Pour garbanzo beans into the blender, reserving about a tablespoon for garnish. Add reserved liquid, lemon juice, tahini, and salt to the blender. Blend until creamy and well mixed.

    Transfer the mixture to a medium serving bowl. Sprinkle with pepper and pour olive oil over the top. Garnish with reserved garbanzo beans.

Broccoli Cheesy Bread

Ingredients

  • 3 cups broccoli rice
  • 1 large egg
  • 1.5 cups shredded mozzarella
  • 1/4 cup grated Parmesan
  • 2 cloves of garlic
  • 1/2 tsp dried oregano
  • salt, pepper, and crushed red pepper flakes
  • 2 tsp chopped parsley
  • warmed marinara for serving

Instructions

  1. Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth.

    Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.

    Bake until golden and dried out, 20 minutes. Top with with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes if using. Serve warm with marinara.

  • 1/3 cup lemon juice
  • 1 tsp salt
  • 2 tbsp olive oil extra virgin
  • 3/4 cups feta cheese chopped

  • salt and pepper to taste
